
Frittata di Lucca
This is another recipe for leftovers and can use any vegetable, not just zucchini. My Nonna would whip this up for lunch and serve it with a salad and french bread.

Ingredients
- Zucchini
- Zucchini Flowers
- 1 Yellow Onion
- Thyme
- Salt
- 6 Eggs
- 4-5 TBSP Milk
Instructions
- Fry the first 5 ingredients in a small amount of olive oil.
- When tender, add the eggs (beaten with the milk).
- Cook on low heat until the egg is mostly done.
- Put the pan under the broiler to finish cooking the top of the egg until slightly brown.
Notes
Accompanied by a green salad and tomatoes, this dish makes a quick meal.
