Frittata di Lucca

This is another recipe for leftovers and can use any vegetable, not just zucchini. My Nonna would whip this up for lunch and serve it with a salad and french bread.

Ingredients
  

  • Zucchini
  • Zucchini Flowers
  • 1 Yellow Onion
  • Thyme
  • Salt
  • 6 Eggs
  • 4-5 TBSP Milk

Instructions
 

  • Fry the first 5 ingredients in a small amount of olive oil.
  • When tender, add the eggs (beaten with the milk).
  • Cook on low heat until the egg is mostly done. 
  • Put the pan under the broiler to finish cooking the top of the egg until slightly brown.

Notes

Accompanied by a green salad and tomatoes, this dish makes a quick meal.
