This is another recipe for leftovers and can use any vegetable, not just zucchini. My Nonna would whip this up for lunch and serve it with a salad and french bread.

Ingredients
Zucchini
Zucchini Flowers
1Yellow Onion
Thyme
Salt
6Eggs
4-5TBSPMilk
Instructions
Fry the first 5 ingredients in a small amount of olive oil.
When tender, add the eggs (beaten with the milk).
Cook on low heat until the egg is mostly done.
Put the pan under the broiler to finish cooking the top of the egg until slightly brown.

Accompanied by a green salad and tomatoes, this dish makes a quick meal.
