Diana's Cookie party soup
A staple at the annual Raymond cookie party, the hearty ingredients keep party goers warm and happy.

- 2.5 - 3 lbs. ground chuck
- 1 medium onion chopped
- 3/4 - 1 medium green bell pepper chopped
- 2 medium carrots peeled and chopped
- 1 T olive oil
- 1 large russet potato diced
- 1/2 head cabbage shredded
- 1 large can whole peeled tomatoes
- 1 small can whole diced tomatoes
- 1 tsp oregano to taste
- 1/2 tsp pepper - ground
Directions
In a large pan (Dutch Oven), add the olive oil and heat for a bit.
Add chopped onions, carrots, bell peppers. Cook until theybegin to soften. Add the ground chuck in small chunks, mixing as you go.
Turn frequently until well browned.
Add 1 palm full of oregano.
Add pepper (to taste).
Continue turning over until the onions are clear.
Add tomatoes. Crush the whole peeled tomatoes over the panwith your hands. Continue turning.
Add the diced potato.
Add the shredded cabbage by laying it on top and turning themixture over to incorporate it. Reduce the heat to low.
Cook for 35 minutes – turn once during this time.
Turn off the heat and cover.
It’s always best when it sits for a day or so.
Serve with sour cream and red wine in a crockpot. Keeps everyone
warm during those cold Cookie Parties.
