
Diana's Cookie party soup
A staple at the annual Raymond cookie party, the hearty ingredients keep party goers warm and happy.

Ingredients
- 2.5 - 3 lbs. ground chuck
- 1 medium onion chopped
- 3/4 - 1 medium green bell pepper chopped
- 2 medium carrots peeled and chopped
- 1 T olive oil
- 1 large russet potato diced
- 1/2 head cabbage shredded
- 1 large can whole peeled tomatoes
- 1 small can whole diced tomatoes
- 1 tsp oregano to taste
- 1/2 tsp pepper - ground

- Pre-chop all of the fresh ingredients
Directions
- In a large pan (Dutch Oven), add the olive oil and heat for a bit.
- Add chopped onions, carrots, bell peppers. Cook until theybegin to soften.
- Add the ground chuck in small chunks, mixing as you go.
- Turn frequently until well browned.
- Add 1 palm full of oregano.
- Add pepper (to taste).
- Continue turning over until the onions are clear.
- Add tomatoes. Crush the whole peeled tomatoes over the panwith your hands.
- Continue turning.
- Add the diced potato.
- Add the shredded cabbage by laying it on top and turning themixture over to incorporate it.
- Reduce the heat to low.
- Cook for 35 minutes β turn once during this time.
- Turn off the heat and cover.
Notes
Itβs always best when it sits for a day or so.
Serve with sour cream and red wine in a crockpot. Keeps everyone
warm during those cold Cookie Parties.
